Ingredients:

(serves 6-8)

2/3 cup arborio rice

pinch of salt

1/3 cup sugar

3 egg yolks

1 vanilla bean, split or, 1 tsp pure vanilla extract

4 cups milk

2 tsp almond extract

225 g can dark cherries (drained & cut in half), leave few for decoration

Roasted almonds for decoration

Method:

1. Bring the milk, rice and salt to a boil in a non-stick saucepan. Reduce heat and simmer on a medium with constant stirring.

2. In a bowl mix egg yolks, sugar, almond and vanilla extract to dissolve sugar. With a ladle remove about one cup of milk/rice mixture and gradually whisk it into the egg mixture.

3. Slowly pour this egg mixture into the pan by continuous stirring, then continue cooking for another 5 minutes, until its thick. Stir in the cherries and pour the pudding into a large serving bowl or individual dessert bowls.

4. Decorate with remaining cherries and roasted almonds. Chill it in the fridge before serving.

Ingredients:

(Serves 4)

* 4 lean lamb chops,

* 3 cloves garlic, crushed

* 4 tsp extra-virgin olive oil

* 1 tbsp fresh rosemary leaves

* salt and fresh ground pepper

Method:

Combine olive oil, garlic and rosemary. Season the lamb with salt and pepper and cover with garlic mixture. Marinate at least 1 hour, overnight if possible.

Grill over medium high heat to desired liking. Alternatively shallow fry pan.

Note: Some people are sensitive to the smell and taste of lamb. Classy rosemary and garlic seasoning combination will surely take care of this and convert many consumers. Serve with roasted vegies and seasonal salad.

Ingredients:

(Serves 4)

* 1/2 kg cleaned, snapped green beans

* 1 red or yellow sweet pepper

* 3 cloves garlic

* 150 to 200 g Serrano ham cubes

* 3 Tbsp Spanish virgin olive oil

* salt to taste

Method:

Steam green beans for approximately 5 minutes. Remove from steamer and set aside.

Remove steam and seeds from pepper. Cut pepper into long strips. Peel and chop garlic. Cut ham into small cubes.

Pour olive oil into a large heavy frying pan and heat over medium. When hot, add pepper and garlic and sauté. Once peppers are soft and browned, add green beans and cubed ham. Salt to taste. Stir to coat green beans and cook for 4-5 minutes.

Note: This dish is perfect to accompany roast or barbecued meat, fish or chicken.
